White Miso Ginger Dressing
I got inspired to make this dressing when I saw a recipe online from Debra's Natural Gourmet in West Concord, MA. Everything they make is delicious and really good for you, too. I had the main ingredient for the dressing (white miso) in the fridge but improvised the rest. It's my favorite dressing now for almost everything.
Try it on a slaw of classic cabbage (red and/or green) or finely sliced Chinese cabbage, It's fantastic on finely sliced box choy or cold sauteed kale with garlic. The flavors of the dressing are complex enough for either a minimalist salad or something more varied. Water chestnuts, grated carrot, pea pods and julienned mango are all yummy additions.
White Miso Ginger Dressing
In separate bowl blend all ingredients together. I added ingredients one at a time and blended before adding the next. Refrigerate any leftover dressing. It may separate when stored...shake or stir before using.
1/2cup mellow white miso
1/4 cup sesame oil
1/4 cup olive oil
1 tablespoon raw honey
1 teaspoon dry mustard
1 tablespoon (or more) grated fresh ginger
1 cup rice vinegar
juice of 1/2 lemon
